Vietnamese Salad

Ingredients
1 head romaine lettuce, chopped
1 head butter lettuce, chopped
2 scallions
1 ruby-red grapefruit
1 packet stevia or 1 teaspoon agave
3 tablespoons fish sauce
3 tablespoons lime juice
½ teaspoon chili garlic paste
1 tablespoon chopped peanuts
½ cup chopped fresh cilantro
¼ cup chopped fresh mint
Directions
- Wash all ingredients. Divide the lettuce among 2 to 3 plates.
- Slice the scallions, and place over the lettuce.
- Divide the grapefruit into 3 pieces.
- Mix together the stevia or agave, fish sauce, lime juice, and chili paste, and place over the lettuce, onion, and grapefruit.
- Top the salads with the peanuts, cilantro, and mint. Serve.
