Shrimp Pizza

Ingredients
1 (8-inch) whole-wheat pita bread shell
½ cup mozzarella cheese, divided
1 cup mixed salad greens
2 medium plum tomatoes, chopped
1 small red onion
10 chopped olives
6 cooked, peeled, and deveined shrimp
1 tablespoon feta cheese
Directions
- Preheat the oven to 450°F.
- Top the pita with half the mozzarella cheese, and bake for 5 minutes at 450°F.
- Combine the salad greens, tomatoes, onion, olives, and shrimp in a large bowl.
- Top the bread shells with the shrimp mixture, and sprinkle with the feta cheese and the remaining mozzarella cheese. Cut into wedges, and serve.

I just bought the book after seeing Dr. Aziz on Fox & Friends, and spent the morning reading as much as I could...then headed to the market. Wow, this makes so much sense! My cart was full of "carbs" like plums, cauliflower, asparagus and berries. YEAH!
