Mediterranean Avocado Boats

1 tablespoon lime juice
2 ripe avocados, peeled and halved
 ½ teaspoon butter
5 medium eggs, beaten
2 green onions, minced
¼ cup chopped fresh cilantro
4 olives, chopped


  • Pour the lime juice on the avocado halves, and set aside.
  • Melt the butter in a large skillet
  • Mix together the eggs, onions, cilantro, and olives, and place in a large skillet with the butter.
  • Cook for 5 minutes over medium heat. Set aside.
  • Place the cooked egg mixture in the avocado halves. Add salt and pepper. Serve.
